Let’s celebrate Norway’s Constitution Day!

Join us as we celebrate Norway’s Constitution Day—possibly Norway’s biggest and most important celebration of the year.

This is when we dress up in “bunad” (our various national costumes), walk in parades, and eat lots of hot dogs and ice cream. But there are also many other delicious dishes and treats too!

This class will give you a great representation of what many Norwegians eat on this day and festive foods you can make and enjoy for a variety of occasions.

What we’ll be cooking together:

Rekesalat (“Shrimp” Salad)

Norwegians love this dish, tangy and light with fresh lemon juice, crunchy red onions and celery and dressed in homemade mayonnaise (which you will learn how to make) and sour cream, topped with dill. 

Karbonader med løk

Norway’s version of a hamburger which you can serve hot or cold, topped on open-face sandwiches with caramelized onions. A classic!

Bløtkake (17th of May Flag Cake)

This layered cream cake will be the  ‘piece de resistance ‘ on your table, filled with strawberry jam, whipped cream and vanilla custard and is decorated with fresh berries in the colors of the Norwegian cake. A stunning center piece! 

This class will show you how you can make delicious, authentic-tasting Norwegian dishes, whether you want to emulate a seafood, meat or dairy-based dish.

These foods represent some of the most popular foods enjoyed on May 17th – all without animal products but which still contains 100% of the flavors of Norway!

Sunny is a native of Norway and a professionally trained chef and wine consultant with nearly 20 years of experience in the food and wine industry. She had her own catering company for seven years, and today she is a vegan food blogger and digital creator with a special focus on Norwegian cuisine.

Sunny is also a Health Coach from the Institute of Integrative Nutrition with a certification in Plant-Based Nutrition from eCornell. She enjoys making recipes for anyone who loves to explore plant-based foods and whom she calls “plant curious”.
