In class we’ll make the following pastries together:

Norwegian “Epleruller med Kanelkrem”

Similar to apple turnovers, these pastries are filled with a cinnamon buttercream and topped with Scandinavian pearl sugar.

Icelandic Jólakaka

This Christmas pound cake scented with cardamom is an Icelandic classic and popular year-round. Filled with raisins and chocolate, it’s mouthwatering and super simple to bake.

Norwegian Solskinnsboller

Fluffy, yeasted cardamom buns are spread with tasty raspberry preserves, rolled up like a cinnamon bun, and filled with a gorgeous vanilla custard.

Icelandic Sjónvarpskaka

This soft, and juicy vanilla sponge cake topped with a caramelized coconut layer, is another Icelandic favorite and out of this world!

Sunny is a native of Norway and a professionally trained chef and wine consultant with nearly 20 years of experience in the food and wine industry. She had her own catering company for seven years, and today she is a vegan food blogger and digital creator with a special focus on Norwegian cuisine.
